IDEAL PAIRING WITH
The vivacity and elegance of black Malvasia in rosé give very great combinations in gourmet aperitifs. The fresh sip is given to appetizing fried fish.
The exotic flavour of the wine guarantees a fascinating oriental pairing with sushi roll, mixed sashimi and fresh fruit.
TASTING NOTES
Cherry pink color, lively in bright reflections. On the nose it offers perceptions of small red fruits such as raspberry and strawberries. The most original characteristic is evident in hints of Mediterranean aromatic herbs. Fresh taste, pleasant in volume and elegant persistence. Pleasant returns of the crunchy red fruit

PRODUCTION AREA: Provinces of Brindisi and Lecce in southern Puglia
TRAINING SYSTEM: Counter-espalier with spurred cordon
SOIL: Clayey
PLANT DENSITY AND YIELD: 4500 plants per hectare and 2.5 kg of grapes per plant
HARVEST: The harvest is done in the first hours in the morning, in the cooler hours of the day
VINIFICATION: After harvesting, the grapes are cooled to 0 oC and placed inside the soft press for about 4 hours in contact with the skins from where the characteristic “cherry pink” colour is extracted.
The pressed, inside a stainless steel tank, ferments at low temperature for about 10 days
AGEING: 3 months in stainless steel vessels
ALCOHOL: 12,5%

Cantine Paololeo
If it is true that behind every bottle of wine there is always a nice story to tell, the one of Paololeo wines is a simple but beautiful story, just like all the family stories are.
Today Paololeo winery is a modern company: it covers an area of 17,000 square meters and is equipped with a very modern winemaking system, a large barrel room and a cutting-edge bottling line capable of bottling 7000 bottles per hour.
However, the "heart" of all the current area under vines are still those 25 hectares where, at the beginning of the twentieth century, the great-grandfather began to vinify his grapes in Masseria Monticello. Then his nephew Paolo Leo inherited the land and built the winery.
Today it is still an heir, the namesake Paolo Leo, son of Nicola, to lead the new winery, together with his wife Roberta and his eldest sons Nicola and Stefano, who are paving the way for the younger brothers Francesco and Alessandro.
