In Salento, Chardonnay is known for its delicate aromas  of ripe fruit, with a good body and a fine freshness that perfectly pair with traditional Apulian dishes.</em></p>
<p><strong>GRAPE VARIETY</strong>: Chardonnay</p>
<p><strong>APPELLATION:</strong> Salento IGP</p>
<p><strong>PRODUCTION AREA</strong>: province of Brindisi in Southern Puglia</p>
<p><strong>TRAINING SYSTEM</strong>: cordon training, spur-pruned vines</p>
<p><strong>SOIL</strong>: medium texture</p>
<p><strong>PLANT DENSITY AND YIELD</strong>: 4500 plants per hectare and 2.5 kg of grapes per plant</p>
<p><strong>HARVEST:</strong> The harvest is carried out in the early hours of dawn around the first ten days of August, to avoid the high summer temperatures of Salento, preserving the freshness and acidity of the fruit.</p>
<p><strong>VINIFICATION:</strong> The grapes are destemmed and crushed; follows a short cold maceration and a subsequent soft pressing of the must. Fermentation with selected yeasts is carried out at a temperature of 15 °C for about 10 days.</p>
<p><strong>AGEING</strong>: 4 months in stainless-steel vessels and 1 month in bottle</p>
<p><strong>ALCOHOL</strong>: 12.5%</p>
<p><strong>CALORIES</strong>: 87.5 kcal / 100 ml</p>
<p><strong>TASTING NOTES</strong>: Straw yellow color with bright and luminous reflections. On the nose it offers very pleasant notes that call to mind  yellow-fleshed fruit such as peaches and pineapple. Tantalizing hints of exotic fruit give a sensual vivacity. An active freshness makes the sip dynamic. Pleasant in flavor it gives a cheerful and festive touch.</p>
<p><strong>SERVICE:</strong> 8-10 °C</p>
<p><strong>FOOD PAIRING: </strong>The delicacy and freshness of this Chardonnay becomes an excellent secret for cheerful aperitifs, particularly exhilarating during the hot summer evenings. Cured meats and cheeses are very pleasant sip companions. Red potato chips and crispy fries make the tasting dynamic.</p>

<p><strong>PLANT DENSITY AND YIELD:</strong> 4500 plants per hectare and 2 kg of grapes per plant</p>
<p><strong>HARVEST:</strong> The harvest is carried out in the early hours of dawn, when the temperature is lower, to preserve freshness and aroma</p>
<p><strong>VINIFICATION:</strong> Grapes are destemmed and crushed. The fermentation takes place at a controlled temperature of 22-24 °C and lasts 8-10 days. During the fermentation, periodical pumping over and delestage are carried out to encourge the extraction of colour and soft tannins from the skins. Then, the wine is soft pressed and the malolactic fermentation takes place in stainless steel tanks</p>
<p><strong>AGEING:</strong> 3 months in French oak barrels</p>
<p><strong>ALCOHOL:</strong> 14,50° alc.</p>
<p><strong>TASTING NOTES:</strong> Intense ruby red colour; delicate hints of small red fruits such as blackberries and mulberries when fully ripe. Hints of dried plums and sweet spices give an enveloping tertiary perception. Long, soft finish with silky tannins.</p>
<p><strong>SERVICE TEMPERATURE:</strong> it is recommended at 18°C in large glasses that favor its maximum olfactory expression</p>
<p><strong>FOOD PAIRING:</strong> The aroma of Moramora marries slow-cooked meat sauce. The best roasted meats enhance the structure of the wine. Paired with cured meats and cheeses it becomes a great companion.</p>

<p><strong>PLANT DENSITY AND YIELD:</strong> 4500-5000 plants per hectare and 2.5 kg of grapes per plant</p>
<p><strong>HARVEST:</strong> The manual harvest is carried out in the early hours of dawn in order to preserve freshness and aroma.</p>
<p><strong>VINIFICATION</strong>: After harvesting, the grapes are destemmed and the crushed grapes ferment in steel at a controlled temperature of 22-24°C for 8-10 days. The fermentation is controlled so that the daily pumping overs can express the best typicality of the vine. The malolactic fermentation then takes place.</p>
<p><strong>AGEING</strong>: 5 months in stainless steel vessels and 1 month in bottle</p>
<p><strong>ALCOHOL:</strong> 13%</p>
<p><strong>CALORIES:</strong> 91 kcal / 100 ml</p>
<p><strong>TASTING NOTES</strong>: Intense ruby red color with violet hints. On the nose, it gives fragrant perceptions of ripe red fruit, currant jam and raspberries. Memories of ripe plums fade into spices of black pepper and cinnamon. On the palate it offers a pleasant volume, velvety tannins and pleasant freshness. Appetizing finish with a particularly spicy persistence.</p>
<p><strong>SERVICE TEMPERATURE:</strong> it is recommended at 18°C in large glasses that favor its maximum olfactory expression</p>
<p><strong>FOOD PAIRING:</strong> The Negroamaro of this line goes well with richly structured meats. Combined with braised meats and wild boar sauce it can enhance the noblest tables. Structured cheeses and spicy salami are a good start for a big sip.</p>

<p><strong>APPELLATION:</strong> Puglia IGP</p>
<p><strong>PRODUCTION AREA</strong>: province of Taranto, southeast of Puglia</p>
<p><strong>TRAINING SYSTEM</strong>: spurred cordon</p>
<p><strong>SOIL</strong>: medium texture</p>
<p><strong>PLANT DENSITY AND YIELD:</strong> 4500 plants per hectare and 2.5 kg of grapes per plant</p>
<p><strong>HARVEST:</strong> The manual harvest is carried out in the early hours of dawn, when the lower temperatures help to preserve freshness and aroma in the wine.</p>
<p><strong>VINIFICATION:</strong> after crushing, grape juice is subject to a short cold maceration on the skins, lasting 5-6 hours; soft pressing and fermentation at controlled temperature of 15-16 °C.</p>
<p><strong>AGEING:</strong> 3 months in stainless steel tanks and 2 months in bottle</p>
<p><strong>ALCOHOL:</strong> 12.5%</p>
<p><strong>CALORIES:</strong> 87.5 kcal / 100 ml</p>
<p><strong>TASTING NOTES:</strong> Medium intense pink color with violet tinges; pronounced bouquet of flowers and red fruits, specially cherry and raspberry; round and harmonious taste, with a right acidity and a pleasant and fruity finish.</p>
<p><strong>SERVICE</strong>: 8-10 °C</p>
<p><strong>FOOD PAIRING:</strong> appetizers, soups, seafood and fresh cheeses with delicate flavors; pasta with vegetables, poultry; friselle salentine.</p>
