The Salento caponata is a slightly simpler version of the Sicilian one, there are many local variations that involve the use of different vegetables, but our palate has been conquered by Vizzino.
In this case the product is made up of 35% dried courgette, 35% dried peppers, yellow tomato, shallot, tomato sauce, extra virgin olive oil, chilli and salt.
The Minimum Storage Term is up to 30 June of the second following year for productions made from 1 January to 30 June, or 31 December of the second following year for productions made from 1 July to 31 December.
The raw materials are processed following codified instructions and are purchased by qualified suppliers and are also subjected to safety and quality controls. The stabilization heat treatment performed is checked instrumentally in each production cycle in order to verify the achievement of the correct temperatures at the core of the product and their maintenance for the established times.
The product can be stored at room temperature, in a cool and dry place. Once opened, it should preferably be consumed within 15 days of opening the jar. The opened product must be stored in the refrigerator (4-6 ° C)
