Only the biggest anchovies, fished in spring, become delicious Fillets of Anchovies in olive oil. First of all, they are preserved in salt in chestnut barrels, the so-called terzigni, for more than 8 months.

Then, anchovies are cleaned of salt, boned and prepared to be preserved in olive oil. This process, the result of traditions handed down from generation to generation, allows to extend storage times, without affecting the flavor and quality, as well as making it a product of gastronomic excellence.

Anchovy fillets in olive oil are particularly suitable for the preparation of appetizers, bruschetta and as a condiment for salads or pasta dishes.
