Description

From the union of Negroamaro grape with other local grapes, Ironico Rosé is born. A soft pressing of the bunches gives this wine a delicate aromatic extraction. Refermentation takes place between January and February with the Martinotti method. The irony of a blend, which will best express itself in large glasses that best favor the maximum olfactory expression.

PRODUCTION AREA: south-east rural area of ​​the province of Brindisi

TRAINING SYSTEM: cordon training, spur-pruned vines

SOIL: medium-textured

PLANT DENSITY AND YIELD: 4500 plants per hectare and 2.5 kg of grapes per plant

HARVEST: the harvest is done in the early hours of dawn at the beginning of August, to avoid the high summer temperatures and preserve the freshness and aroma of wines.

VINIFICATION: After the harvest follows a soft pressing of the whole bunches to give a delicate aromatic extraction. Then must is clarified by cold static clarification. Fermentation is carried out at a controlled temperature with selected yeasts. The refermentation takes place in January – February in autoclave (Martinotti method) in about 20 days. In this phase the second fermentation takes place which gives the wine its sparkling characteristic.

TASTING NOTES: Cherry pink color with bright reflections. The nose recalls crunchy hints of flowers and red fruits such as cherries and raspberries at the beginning of ripening. From the soft sip it offers a calibrated freshness that brings to a pleasant finish and evident fruit.

SERVICE: It is recommended at 10-12 ° C in large glasses that favor the maximum olfactory expression.

If it is true that behind every bottle of wine there is always a nice story to tell, the one of Paololeo wines is a simple but beautiful story, just like all the family stories are.

Today Paololeo winery is a modern company: it covers an area of 17,000 square meters and is equipped with a very modern winemaking system, a large barrel room and a cutting-edge bottling line capable of bottling  7000 bottles per hour.

However, the "heart" of all the current area under vines are still those 25 hectares where, at the beginning of the twentieth century, the great-grandfather began to vinify his grapes in Masseria Monticello. Then his nephew Paolo Leo inherited the land and built the winery.

Today it is still an heir, the namesake Paolo Leo, son of Nicola, to lead the new winery, together with his wife Roberta and his eldest sons Nicola and Stefano, who are paving the way for the younger brothers Francesco and Alessandro.
