Negroamaro grapes have been grown in southern Puglia since the sixth century BC, today represent about 72% of the vineyard area of the provinces of Brindisi and Lecce. Considered the most famous of the native Salento vines, Negroamaro faithfully reflects the identity of Salento thanks to its structure, persistence and aromatic depth. Its fruity and lively character makes it an excellent drinkable red wine, even in cases where no passage in oak is made.

PRODUCTION AREA: rural area of San Donaci in the province of Brindisi.
TRAINING SYSTEM: traditional Apulian sapling with short pruning, with spurs with two buds
SOIL: medium texture
PLANT DENSITY AND YIELD: 4500 plants per hectare and 2.5 kg of grapes per plant
HARVEST: The harvest is carried out in the early hours of dawn, when the ambient temperature is lower, to preserve freshness and aroma.
VINIFICATION: In the cellar the grapes are de-stemmed and the crushed grapes are placed in stainless steel containers for fermentation. This takes place at a controlled temperature of 22-24 ° C and lasts 8-10 days. During fermentation, pumping over and delestage are carried out to extract color and soft tannins from the skins. Then the racking is carried out with a soft press and after the first racking, always in a stainless steel container, the malolactic fermentation takes place.
