Description

Salento offers the ideal environmental conditions for practicing organic farming. The high solar irradiation during most of the year, combined with the absolute absence of rain during the summer and the great ventilation make it possible to produce healthy grapes, without having to resort to synthetic treatments. Aware of the importance of reducing the use of herbicides and pesticides to protect the landscapes and biodiversity of Salento, as well as the health of Salento, the PaoloLeo Cellars offer an entire line of ICEA certified organic wines.

PRODUCTION AREA: low yield vineyards between the provinces of Brindisi and Lecce

TRAINING SYSTEM: espalier with spurred cordon

PLANT DENSITY AND YIELD: 4000 plants per hectare

HARVEST: the grapes are harvested manually several times, between the end of August and the beginning of September, in the early hours of dawn, to avoid that the high temperatures of the end of summer negatively affect the freshness and aromas of the wine.

VINIFICATION: The vinification of the three vines takes place separately using the same technique: the bunches are disparate and delicately pressed, then the must is left to macerate for about 18 hours at a temperature of 12 ° C. This is followed by the blend of the three varieties that are left in contact with the lees.

AGEING: 3 months in steel and 1 month in bottle
